Meal Planning 2/28-3/17

OK! So I posted on Facebook for some help with healthy options for snacks! We have tried to eat healthier in our home and its HARD!!!! There are so many yummy things out there that are horrible for you!!!!! BUT, we are trying and I am learning that you have to be patient! Not everything can change at once! So I struggle with snacks! The kids like to snack, therefore momma likes to snack! I would love to have all kinds of healthy things cut up and ready to go in the fridge! You know~ kinda like this

HAHA TOTALLY KIDDING!!!!!! We don’t even own a cat!!

Anyways- here is my list for things that we will be eating this week! My hope is that this may help you if you need ideas and things that are lower calorie, but still have flavor! And are EASY!! I love to cook, but there is nothing worse then finding a new recipe and it calling for 155 things you DON’T have at home!

So here we go!

Breakfast- I typically pick 2-3 things and make them a couple of times during the week! I find that this is much easier for us!
Ham & Cheese Omelet with an English Muffin
Slow Cooker Apple Cinnamon Oatmeal ~Overnight in the Crock Pot!
Healthy Banana Pancakes

Snacks- Again, I rotate these throughout the week and we eat these in the morning & afternoon!
Skinny Pop Popcorn
Celery & Peanut Butter
Grapes & Cubed Cheese
Homemade Trail Mix

Lunch-
I try REALLY hard to make enough at dinner so that hubby has enough food for lunch the next day! This is my weak area so I will be scouring the web and Pinterest to find some yummy things for lunch in the event there are no leftovers 😉

Dinners-
Italian Chicken & Potato Bake
Stuffed Green Peppers
Parmesan Baked Pork Chops with a side of this Easy Cheesy Zucchini Bake
Chicken Chili- Cut up 3-4 chicken breasts and sauté in EVOO on stovetop until cooked through. Add in a packet of chili seasoning, can of diced tomatoes, can of corn (drained) and a a can of kidney beans (rinsed). Heat through and serve with the fixins’!
Beef Stew – we will substitute with Venison but use what you have! 🙂
Skinny Bruschetta Chicken with a side of Roasted Cauliflower.
